green eggs

Breakfast is the most important meal of the day. If you skip breakfast, you will feel lethargic the entire day. Lethargy then would make you crave for something sugary to keep you awake. So skipping breakfast is a good way to gain weight because of the food cravings during the day.

However, if you eat a hearty and nutritious meal for breakfast like this green eggs and ham recipe, then you can just have a light lunch and dinner. Here is a recipe of a great breakfast that is packed with nutrients that can help you all throughout the day:

Ingredients

  • Prosciutto
  • Fresh eggs
  • Fresh basil
  • Spinach
  • Milk
  • Parmesan cheese
  • Extra virgin olive oil

Procedure

When cooking this green eggs and ham recipe, you need to check if your eggs are fresh. The way to do this is by submerging the eggs in water, and if the eggs sink, then that means they are fresh.

1)      Slice the prosciutto into small cubes.

2)      Pan-fry them in extra virgin olive oil over medium heat for about four minutes. Drain to remove excess oil.

3)      While the prosciutto is frying, thaw some frozen spinach and place them in a food processor. Add some milk. If you prefer low fat milk, then it is perfectly okay. You can even substitute soya milk, if you are lactose intolerant. Puree them together until it reaches a smooth consistency.

4)      The next step in this green eggs and ham recipe is to add some coarsely chopped basil leaves into the food processor. Then add four fresh eggs.

5)      In a skillet, add some olive oil, and pour in the pureed spinach, basil, eggs, and milk. Set the fire to low heat.

6)      The edges of the scrambled eggs will be the first one to get cooked so just slowly scrape them off so as not to stick to the skillet.

7)      Add some parmesan cheese while the scrambled eggs are still cooking. This will add some more saltiness and flavor to the eggs.

8)      Turn off the fire and season with salt and pepper. When cooking eggs, always add the salt to the very end because salt breaks the protein in eggs, making them watery.

9)      The green eggs and ham recipe is almost done. Transfer them in a bowl and top it with the crispy prosciutto bits. Then add parmesan cheese and drizzle with extra virgin olive oil.

This breakfast is good for growing children. It is a good way to teach and train them how to eat and appreciate the goodness of fresh vegetables. They will appreciate the taste of this green eggs and ham recipe because it has some cheese and milk, making the dish very appealing to their taste buds. Add to that the crunchiness of the prosciutto. The different dimensions of the flavors from cheese and milk will mask the taste of the vegetables. This breakfast is very good for adults and children because of the nutritional value you can get from eggs and veggies, plus the carbohydrates from the bread that you’re going to eat it with.
