If you are a big fan of foods, you are sure to be a big fan of meat and sausages also. Men are fond of eating meat not just because of the taste but because this gives them the energy to do lots of kinds of stuff. Also, because these are some of the best-tasting foods that anyone can eat, these are some of the most beloved dishes that men are on the lookout for during gatherings and even in simple outdoor barbeques. Whether they are mousse, dry cured or fresh, these meat goodies are always a men’s favorite.

Many guys want to know how to make homemade versions of these meat goodies. Because just like most foods, homemade sausages are better than the ones bought in stores. Fortunately, these all meat goodies are not hard to make. You do not have to be a culinary student just to know how to make and cook these meaty goodies.

Making Homemade Fresh Sausages

Making Italian sausage is not that hard. Because they are of the fresh kind, they do not need curing and drying. Thus, you can cook and serve them right after making them. Also, you just need a couple of ingredients along with some kitchenware to make them so they can be done in almost any kitchen.

Get the Ingredients

The first thing you need to do is prepare all the ingredients. You will most likely find them in your kitchen so no need to worry. You just need some pork (Boston butt), pork intestines, 7 tbsp fresh parsley, 5 tbsp fennel seeds, 3 tbsp black pepper, 5 tbsp kosher salt, 6 tbsp paprika and 7 tbsp crushed red pepper. You will also need half a cup of chilled water and half a cup of white wine.

Grind the Pork

Before grinding the pork, make sure that everything that you’re going to use are cold. Put the tray or plates where you are going to put the meat in the refrigerator for a couple of minutes to keep them cold. This will prevent the fat of the meat from melting, which can result in a dry sausage.

Mix It All In

After grinding the pork, put it in a bowl which is over a bigger bowl with ice and water. This will keep the mixing bowl cold, which will keep the fat from the pork from melting while being mixed.

Mix all the ingredients then marinate for two hours before putting them all in the extruder.

Put the Pork Intestines in the Extruder

Be careful in putting the intestines in the tube of the extruder to make sure that it won’t break. After you have put them on the tube, tie a knot at the end and start extruding the marinated pork into it.

Do this gently so that the pork intestines will not break. After extruding all the pork mixture, remove the intestines from the extruder them tie a knot at the end.

When mixing your pork mixture, make sure that you use a plastic spatula to keep the meat from getting warm. Also, make sure that you mix everything together very well to avoid concentrating the flavor in just one place.
