This recipe for tuna quinoa cakes is a lot more simple than you would think since the end result is pretty impressive. You can technically use any kind of canned fish but tuna and salmon are great choices since they are easy to come by and they are both good sources of the omega-3 fatty acids EPA and DHA which we need. The sweet potato brings in plenty of nutrients as well as some tasty bulk. This recipe only takes about 20 minutes from start to finish.

 

Ingredients

½ cup cooked, mashed sweet potato
2 cans tuna (or salmon) that has been drained
¾ cup cooked quinoa
¼ cup green onion, chopped
2 cloves garlic that has minced
1 tablespoon lemon juice
1 egg
¼ cup Greek yogurt
1 tablespoon mustard (type of your choice)
½ cup breadcrumbs

½ teaspoon cayenne pepper
1 teaspoon paprika

 

Directions

1. First take a small bowl and mix together the fish with the sweet potato. Make sure it is nice and blended together.

2. Next add the rest of the ingredients to the bowl and stir it all up until it is combined well.

3. Then you will create the individual cakes/patties which you can do with your hands. Forming six cakes with the mixture will create some good sized patties that will still cook through.

4. Next grease a baking sheet and toss on the patties. Bake for 20 minutes at 400 degrees, but make sure to flip them halfway to cook evenly.

That is pretty much it. The patties are pretty good on their own but they can also be enhanced by any number of toppings such as guacamole or ketchup. They can be eaten as the main event in a meal, or perhaps you’ll enjoy them on top of a salad.
