There are a lot of really delicious breakfast options out there, but not all of them are so healthy. Especially when they come from fast food or any brunch spots that don’t have your waistline as their top priority. But luckily you can recreate pretty much any of your favorite breakfast recipes at home and lighten them up a bit. Here’s a great way to make a healthy egg in a ham muffin type deal. These each only contain 150 calories each but have 16 grams of protein…so feel free to eat two.

Ingredients

3/4 pound nitrate-free ham slices
1 cup mushrooms, finely chopped
1 red bell pepper, chopped
2 cups spinach, chopped
1 tablespoon olive oil
12 eggs
Salt and pepper, to taste

Directions

  1. First you will start off by preheating your oven to 350 degrees.
  2. Put some olive oil into a skillet and start heating it up.
  3. Meanwhile you will take the ham slices and put a couple into each round of a muffin tin to form a muffin shape made out of ham.
  4. When the oil gets hot enough for cooking carefully toss in the mushrooms and pepper until they start to soften up, then add in the spinach until it wilts.
  5. Next take those cooked veggies and put a large spoonful of them into each muffin round on top of the ham.
  6. Then you will crack one egg into each ham cup and pour it over the vegetables.
  7. Lastly you will pop this into the oven and bake it for about 15 minutes or just until the eggs cook through.
  8. Salt and pepper to taste, and enjoy!
